Homemade chutney with aubergines


  • Homemade chutney with aubergines

    Homemade chutney with aubergines

    Time preparation: 90 minutes

    Processing time: 200 minutes

    Serves: 1


    Ingredients:
    2 kg. tomatoes 2 kg. peppers 3 aubergines 1/2 bunch parsley 2 carrots 1 tsp pepper 2 tsp salt 50ml vegetable oil 3-4 tablespoons sugar

    Method of preparation:
    Washed tomatoes are immersed for a minute in boiling water and then peel off the skin.
    Bake the peppers on dry pan, place in a bowl and cover with a lid to smother until cool.
    Then is peeled.
    Aubergines are prepared as once peeled, cut into thick slices, add salt, leave for 30 minutes to drain and baked on a grill pan.
    Boil the carrots and strain along with the chopped parsley.
    Tomatoes, peppers and aubergines are milled in a meat grinder separately.
    Put the tomatoes in a pan on the stove over low heat until water evaporates.
    Add milled pepper and aubergine carrots, salt and sugar to taste and leave to simmer until thickened, occasionally stirring occasionally.
    After the mixture is thickened add the oil.
    Season with pepper to taste.
