Roasted pork leg with mustard seeds

    Ingredients:
    2 kg leg of pork, 3s.l.edrosmlyana mustard 2 tablespoons soy sauce, black pepper, coarse salt and oil.

    Method of preparation:
    The roughly ground mustard seeds, the soy sauce, the black pepper, the roughly ground salt and the oil are mixed into a mash, which is spread over the meat. Leave it to soak in the refrigerator at least for two hours. After that coat the meat in aluminium foil and leave it to roast in the oven for 2 hours at 200C. At the end, tear the foil and leave the meat to roast until golden brown.

Chop the meat into cubes and fry it in a separate frying pan in a little bit of oil, then pour over it hot water enough to cover it.     Wash the meat well, brush with oil, season with salt and cover well with mustard. Mix in a bowl the spices – savoury, black pepper, ground white pepper, rosemary, peppermint, oregano, basil, thyme, parsley and mint. Brush the meat with the spices, so it is covered from all angles. Place the meat in a baking pan and roast in a preheated oven for 2-2,5 hours. Cut into slices and serve.

    Fry the meat at all sides until it turns red. Peel the potatoes and cut them into round slices. Place them in the earthen pot, add the meat with the frying pan grease, salt, black pepper, savoury and water to half fill the pot. Stir well and bake the stew for about an hour at moderate temperature.
