Pork knuckle in an earthen pot

  • Pork knuckle in an earthen pot

    Time preparation: 60 minutes

    Serves: 4

    1 pork knuckle paprika black pepper garlic powder salt 1 kg potatoes 2 carrots 300 g mushrooms 3 peppers Chapter 1. CW. onion 2-3 cloves garlic 1 tsp ind. wren few grains allspice black pepper salt cooking oil 300 g of red wine

    Method of preparation:
    Season the meat with paprika and black pepper, garlic powder, salt and leave it in the fridge for 24 hours. Chop the carrots and potatoes into cubes, the peppers into slices, finely chop the onions, and leave the garlic as whole heads. Place the vegetables in a baking pan. Sprinkle over a little bit of oil and a tsp of nutmeg, a few seeds of allspice, paprika and salt. Pour about 1,5 cm of water and 300 g of red wine. Place the pork knuckle on top of the vegetables. Roast at low heat in the oven for 3 hours and 30 minutes at 200 C and then at 180.

    The roughly ground mustard seeds, the soy sauce, the black pepper, the roughly ground salt and the oil are mixed into a mash, which is spread over the meat.     Wash the canned peas and leave them to soak in water. Chop finely the onions and fry them for just a little while with the flour, paprika and the chopped smoked pig’s cheeks. Chop the meat into cubes and fry it in a separate frying pan in a little bit of oil, then pour over it hot water enough to cover it. When the water evaporates, add the fried vegetables, sprinkle black pepper over them, basil and salt, and stir well. Serve on a bed made of the rice.
